  Lets have Strawberry Mousse
 
 
Exchanges   1/2 Skim milk
Serving size  1/2 cp

1 (0.3 -ounce) pack sugarfree strawberry jello
1/2 cup water
1/12 cups Fresh sliced strawberries
2/3 cp instant NONFAT dry milk powder
6 -  icecubes
 
Combind the jello and water in a small saucepan stiring well let this stand for 1 minute.
 
Cook this over low heat stirring this constantly 1 minute until disloved.
 
Set aside a few strawberries for Top Garnish .
 
Combind the gelatin strawberries and milk powder in blender cover and process until smooth
 
Add in the ICE Cubes one at a timeProcess until blended.
Spoon into glasses or dishes top with a strawberry piece .
Yields 6 Servings.

               Old Fashioned Lemon Pudding
 
 
Exchanges 1 lowfat milk
Serving size  1/2 cp

3 Eggs seperated                                       
1/4 teaspoon grated lemon
1/2 cp sugar substitute                             
1/3 cp plus 1 tablespoon lemonjuice
1 1/2 cp skim milk                                         
2 tablespoon reduced cal margarine
1/4 cp plus 1 tablespoon all purpose flour
 
 
Combins egg whites and sugar substitute and salt beat at high speed until stiff peaks form.
 
Combind egg yolks milk and remaining ingredients beat until smooth.
 
Fold this mixture into the Egg white mixture.
Pour mixture evenly into 6 (6-ounce) little custard cups
Place the cups in a Baking pan Containing  1 inch of hot water for steaming
Cover these amd Bake 325 for 1 Hour or until a knive comes out clean when
inserted in .

    Peachy Keen Peach Crumb Bake
 
Exchanges  1 fruit 1/2 fat
 
Serving size 1/2 cp

2 cps sliced fresh peaches                 
1/2 teaspoon cinnamon
Pam spray                                                
1/8 teaspoon nutmeg
1/3 cp graham cracker crumbs              
2 teaspoons melted margarine
 
Spray pam into  your cooking pan or pryex.
 
 Arrange peach slices in bottom of the pan.
Combind the graham cinnamon nutmeg in a small bowl stirring well.
Add in the melted margarine and stir until blended.
 Sprinkle this mixture over the peaches and bake this at  350 for 30 minutes.
I like this warm from Oven ...

 Diabetic Delight Apple Pie
 
 
Exchanges  1/2 starch   
1 fruit     
1/2 fat
 
 HINT  : Use a Deep Dish Style Pie Pan
 
Serving Size 1/8 slice of the pie cut into 8 slices evenly 
 
 
Sugar substitute 1/3 cp                                   
4 Granny smith  apples
1 tablespoon cornstarch                                 
1 cp flour
1/2 grated lemon peel  grated                         
1 teaspoon salt
1 teaspoon lemon juice                                  
1/4 cp reduced calorie margarine
1/2  teaspoon cinnamon I use full teaspoon  
1/4 teaspoon nutmeg I use 1/2 teaspoon nutmeg
 3 Tablespoons COLD WATER
 
Combind the Apples ,Sugar Sub ,Cornstarch ,Lemon Juice, Lemon peel.
 
Get ready for this Place the Apple Mixture into your Pie Pan
Im not nuts trust me go ahead put this in the pie plate.
 
Combind the Flour,  Salt ,   cut in the Margarine until resembles coarse meal.
Add Water stirring with a fork until DRY ingredients are moist.
 
Shape this into a Dough Roll
this out on a Floured board and Place this crust over top of the Apple filling.     Bake this at 425 for 30 minutes until Lightly browned.
